Paula Dean's Chicken and Rice Casserole

2 (14v1/2oz) cans green beans (rinsed/drained)
3 cups cooked chicken (diced in large pieces)
1 med. onion (diced and sauted till opaque)
1 (8oz) can water chestnuts (drain/chop)
1 (4oz) can pimentos
1 (10 1/2 oz) can cream of celery soup (use any cream soup you like)
1 (6oz) box long grain/wild rice cooked to package directions
1 cup sharp cheddar grated
pinch salt

Grease 3 qt. casserole. preheat oven to 350 degrees. Mix all the above ingredients together and put into casserole. Bake 20-25 minutes.

This is so yummy…good way to get kids to eat some veggies!

Paula is the best - everyone in my house begs me to make this! It’s the perfect combination of chicken and rice etc, and don’t leave out the pimentos, even if you don’t like them.
