Peach Poppy Seed Muffins
2-1/4 cups all purpose flour
1/4 cup whole wheat flour
1 Tbsp baking powder
1/2 tsp salt
1/4 cup butter or margarine
1/4 cup sugar
1 egg
1 cup milk
1 16 oz can peaches, well drained, chopped
2 Tbsp poppy seeds
Sift together the flours, baking soda and salt. Cream butter with sugar until light. Add eggs and milk, then flour mixture. Mix just until barely moistened. Fold in peaches and poppy seeds. Fill 12 greased muffin tins 3/4 full.
Bake at 400 for 20-25 minutes or until golden brown
