Peach Salsa (vegan)

This sweet and spicy salsa recipe blends ripe peaches with tomatoes, red onion, piquant jalapeños and fresh lime juice. Serve with chips as a substitute for traditional salsa or pair peach salsa with Mexican dishes like my Chipotle-Marinated Veggie Kebabs.


2 ripe yellow peaches, peeled, stone removed and diced
2 tomatoes, cored and diced
1 small red onion, peeled and diced
1 jalapeño pepper, stem, seeds and veins removed, diced
Juice from 1/2 lime
Salt and pepper to taste

Mix together diced peaches, tomatoes, onion and jalapeño in a medium-sized bowl. Add lime juice and season with salt and pepper.

Yield: ~ 2 cups salsa
