PEAR BREAD WITH MAPLE WALNUT BUTTER

Ingredients:

Bread:

2 eggs
w cup canola oil
1 cup sugar
1 teaspoon vanilla
1 pear (Bosc) cored and grated
2 cups all-purpose flour
1 teaspoon soda
1 teaspoon baking powder
2 teaspoon salt
1 teaspoon cinnamon
w cup walnuts, chopped (divided)
1 pear, grated
Honey, optional

Maple Walnut Butter:

1 cup maple syrup
12 sticks butter, melted
1 cinnamon stick
2 cups chopped walnuts

Grease 4 x 8 x 2-inch metal loaf pan. Preheat oven to 350 degrees.
Beat eggs, oil and sugar until light and fluffy. Add vanilla and grated
pear.

In separate bowl, blend dry ingredients: flour, soda, baking powder,
salt, cinnamon and 2 cup walnuts. Add flour mixture to wet
ingredients; stir just to moisten. Spoon into prepared pan.

Arrange pear slices on top and sprinkle 4 cup walnuts over top. Bake
50 to 60 minutes, or until tester comes clean. Cool 15 minutes before
removing from pan. Brush with honey, if desired.

Serve with Maple Walnut Butter.

Maple Walnut Butter:

In saucepan, bring syrup, butter and cinnamon stick to a boil for 8 to 10 minutes until soft ball stage. Remove cinnamon stick. Whip until opaque and thickened. Stir in walnuts.

Chill until firm. Yield: Approximately 12 cups

The ingredients say to grate the pear. The instructions say to arrange pear SLICES on top.

NOTE FROM KW - I prefer the grated pear in this recipe - yes you can just place on top - but I don’t like it that way.
