Pepper Jack Stuffed Chicken

2 oz. pepper jack cheese 2 boneless chicken breast 1 t. taco or mexican seasoning 1 T. vegetable oil
Cut cheese into two 2 1/4 inch long chunks. Flatten chicken to 1/4 inch thickness. Place a strip of cheese in each breast. Fold chicken over cheese secure with toothpicks. Rub seasoning over chicken. In a skillet heat oil and brown chicken. Put in baking dish and bake at 350 for 30 minutes.
Served with sweet potato fries and great northern beans.
