Hey. First post and thought I would provide my mastered recipe for the perfect home made English chippy chips!
In the past I have tried many MANY methods, tips and tricks to make the perfect home made fried chips, from par boiling the chips to a four phase cooking method. In the end I just broke it down to how I personally envisioned my perfect chip! I wanted it soft and fluffy in the middle and crispy on the outside…MMMMM!!!
It’s best to have an electric fryer so you can ensure you are cooking at the correct temperature and will ENSURE you make the perfect chips EVERY TIME!

Prep time 5 minutes
Cook time 15 minutes
Total time 20 minutes
Ingredients

[li]4-6 Maris Piper Potatoes (If you don’t have any then any white potato will be fine)
[/li][li]Salt (To taste)
[/li][li]Chip shop vinegar (To taste)

Directions
Step 1
Peel the potatoes and cut them into your preferred chip shape and size. I prefer nice and thick chips!
Step 2
Turn your oil on to a low heat of 130 degrees. While your oil is heating rinse your chips under cold water to in a colander, spread them out over a flat clean surface and pat dry with some kitchen paper.
Step 3
Once the oil has heated to 130 degrees carefully place your chips into the oil and allow to cook for 10 minutes.
Step 4
Once they turn a pale golden colour, remove them to drain. Allow to stand for 5 minutes.
Step 5
Raise the oil temperature to 180 degrees, then place the chips back into the oil. Allow to fry for roughly 2-3 minutes until the chips turn a darker golden colour, then remove to drain.
Step 6
Add salt to taste and a MUST is vinegar, (I prefer chip shop vinegar, there’s NOTHING like it!!) and ENJOY ![]()
