PERFECT POTATO & CHIVE LATKES

1 lg. egg
3 T. chopped chives
2 T. matzo meal or flour
2 T. grated onion
1 T. fresh lemon juice
¾ t. salt
¼ t. pepper
2 ½ lb. baking potatoes, peeled and shredded

Preheat oven to 250* F. Line sheet with paper towels. Lightly beat egg; stir in chives, matzo meal, onion, lemon juice, salt and pepper. Drain and squeeze out any liquid from potatoes; stir in. Heat 3 T. oil in heavy skillet; drop by scant ¼ c. into oil and flatten into 3-inch rounds. Cook 8 to 19 minutes or until browned and crisp, turning only once. Transfer to prepared sheet to keep warm. Serve with applesauce and sour cream.
