PIEROGIES WITH ITALIAN SAUSAGE AND MUSHROOMS

1 (16.9-ounce) package Mrs. T’s Frozen Potato and Onion or Potato and Cheddar Cheese Pierogies
3 links (8 ounces) sweet or hot Italian sausage (pork or turkey), cut in 1/2-inch slices
1 (8-ounce) package fresh white mushrooms, sliced (about 3 cups)
1 (14-ounce) jar marinara sauce

Boil pierogies according to package directions; drain and keep warm in the saucepan. In a large skillet, cook sausage until browned on both sides, about 10 minutes. Add mushrooms; cook and stir until golden, about 6 minutes. Add marinara sauce; heat until bubbly, about 5 minutes. Stir in drained pierogies; heat until hot, about 2 minutes.

Yield: 2 to 3 portions; about 5 cups
