Pindapple-Pine Nut Turkey Salad

10-12 oz. smoked turkey or chicken
1/4 cup pine nuts
1/2 cups trinity mix (fresh pre-diced bell peppers, celery, onions)
! head Boston Bibb lettuce, cored and rinsed.
1 (8-oz.) can pineapple tidbits, drained
1/3 cup mayonnaise
1/4 tsp. herb-seasoned salt
1/8 tsp. pepper

  1. Cut turkey into bite size pieces. Combine remaining ingredients (except the lettuce) in a medium mixing bowl.

  2. Arrange lettuce leaves on a serving platter and mound salad mixture over the lettuce and serve.

Makes 4 servings.

Now let me tell you this would really be good with a nice homemade multi-grain bread or store bought if desired and a my nice homemade Fuzzy Navel Cake, YUM, YUM.
