Pineapple Raisin Cookies
1/2 cup applesauce
2 cups white flour
1/2 cup brown sugar (optional)
1/2 tsp vanilla
1/2 cup raisins
1 tsp baking soda
1/2 cup crushed pineapple with juice
1 tsp baking powder
1 egg white
1/2 tsp salt
Preheat oven to 375 F. Cream applesauce and sugar. Add vanilla and egg white. Next add pineapple and raisins. Sift dry ingredients into creamed mixture. Bake on greased cookie sheet, or line the sheet with tin foil, for 8-10 min.
