Pineapple Right-Side-Up Cake
1 yellow cake mix
2-1/2 cups crushed Pineapple
1 (3-oz.) Vanilla Instant Pudding
1 cup milk
1 (9-oz.) Cool Whip
Shredded Coconut, optional
Prepare the cake mix according to package directions. Bake the cake in a regular, flat cake pan.
After cake is done and still hot, pour the crushed pineapple and juice over cake. Set aside to cool.
In a mixing bowl, combine the instant pudding with 1-cup milk, stir in the Cool Whip, then spread over the pineapple. Cover with shredded coconut.
Chill until ready to serve. Serve chilled.
