Pineapple Yogurt Muffins
2 c. Bisquick
1/2 tsp. baking soda
1/4 c. sugar
1/2 c. coconut
6 oz. pineapple yogurt
1/2 c. crushed pineapple, drained
1 egg, beaten
1/3 c. butter melted
Mix Bisquick, soda, sugar and coconut. Add remaining ingredients. Stir until just moistened.
Fill muffin cups 2/3 full. Bake at 400 degrees for 15-20 minutes or until slightly browned.
Makes 15 - 18 muffins
