Pink Lemonade Cookies

Pink Lemonade Cookies

1 cup butter
1 cup + 1/4 cup white granulated sugar, separated
2 eggs
1 level teaspoon baking soda
3 cups sifted flour
1 6 ounce can frozen pink lemonade concentrate, thawed & separated into 1/2 cup and 1/4 cup portions.

Preheat oven to 400. Need ungreased baking sheets.

Sift the flour and baking soda together and set aside.

Cream the butter and 1 c. of the sugar together. Add the eggs and beat well. Stir the flour mixture into the sugar mixture alternately with the 1/2 c. lemonade concentrate.

Drop by teaspoonfuls, 2 inches apart on baking sheets and bake for 8 minutes or until cookie edges are lightly browned. Remove the cookies from the oven. Brush lightly with the pink lemonade concentrate and sprinkle with the remaining sugar. Let cool on wire racks.

Makes 6 dozen.
