PIZZA PASTA SALAD
1 pound tri colored vegtable twist pasta
3 med. tomatoes, seeded and diced or i use grape tomatoes,they are much sweeter.
1 package (8 ounces ) Cheddar cheese, cube
1 package (8 ounces) mozzarella cheese, cube
6 scallions, thinly slice
1 package (3 ounces) sliced pepperoni
3/4 cup vegetable oil
1/2 cup red wine vinegar
1/3 cup grated Parmesan cheese
2 tsp. dried oregano
1 tsp. garlic powder
1 tsp salt
1/4 tsp. pepper
- Prepare the pasta according to the package directions; drain, rinse, and drain again. Place
in a large bowl and allow to cool.
- Add the tomatoes, Cheddar and mozzarella cheeses, scallions, and pepperoni to the pasta;
toss until well combined.
- In a medium bowl combine the oil, vinegar, Parmesan cheese, oregano, garlic powder,
salt, and pepper; mix well. Pour the dressing mixture over the pasta mixture and toss until
