Pizza-Tasting Chicken Wings
Comments: These wings, served along with pesto, reminds us of the smells of Italy.
32 chicken wing pieces 1/2 teaspoon [2.5 mL] salt 1 teaspoon [5 mL] ground pepper 4 cloves garlic, finely chopped 1/4 cup [60 mL] extra-virgin olive oil 1 cup [250 mL] tomato sauce 8 ounces [227 g] Mozzarella cheese cubes 1 tablespoon [15 mL] dried oregano 1/2 cup [125 mL] pesto [to serve] Preheat oven to 425°F [220°C]. Line a baking sheet with greaseproof paper. Into a large bowl, mix together chicken wing pieces, salt, pepper, chopped garlic and extra-virgin olive oil. Transfer apart onto prepared baking sheet. Bake into preheated oven for 30 minutes. Remove from oven. Coat each chicken wing piece with a little tomato sauce. Top with Mozzarella cheese cubes, then sprinkle with dried oregano. Bake for approximately 6 minutes more, to melt the cheese. Serve, along with pesto.
