When I was in college down in Phoenix in the late 70’s, I worked at a chain called Pioneer Take-Out, just wondering if there any left.
Two blocks down the street was a KFC and every Friday night at closing, each store would send someone to meet halfway for a food exchange, it was usually KFC’s biscuits and potatoes and gravy for Pioneer’s coleslaw and chicken salad. We’d all pig out then finish cleanup and go home.
The secret to the chicken salad was pressure cooked gizzards that only the franchise owner cooked.
