cut-up-chicken, washed and dry
2 to 3 quart pot
6 to 7 tomatoes
1/2 onion
1 green or red pepper without seeds and vains
2 cloves of garlic
4 potatoes peeled and cut by half
Thyme 1 teaspoon
3 or 4 tablespoons of canola oil
2 to 3 cups of water or enough to cover your chicken
first you put in a pot the tomatoes, onion, garlic, pepper with enough water to cover it all, bring it to a boil until the vegetables are well cooked, or when you see that the tomatoes break apart. then blend and put some chicken buillon to flavor the sauce but not to salty because the chicken is going to have some flavor too. After you blend it pass it through a strainer, because you do not want pepper peel on your food. Put it a side.
Salt and pepper your chicken.In another pot big enough to put your chicken pour some canola oil and when its almost smoking put one piece of chicken at a time and let it brown it will take like five minutes, when its all brown put some thyme on top of the chicken and the potatoes and pour three cups of water or just enough to cover the chicken and let it cook.
When it is all cooked pour the sauce on top of it and bring it to simmer and let it simmer for about five minutes. Taste and correct seasoning and serve with white rice. Kids really love it, I tell you because i’ve done it.
