2 chickens, about 4 pounds each, cut by butcher into 6 pieces each, on the bone
Kosher salt and freshly ground black pepper
1 tablespoon olive oil

1 tablespoon olive oil
2 garlic cloves, finely chopped
1 medium shallot, finely chopped
1 cup pomegranate molasses (available at Middle-Eastern groceries and gourmet markets)
3 tablespoons dark-brown sugar
1 tablespoon tomato paste
1 cup chicken stock
Garnish (optional):
Fresh pomegranate seeds
Chopped fresh flat-leaf parsley

Preheat oven to 350 degrees. Season chicken pieces with salt and pepper.
