1 10 ounce package frozen, chopped spinach
1/4 cup finely chopped onion
1 tablespoons flour
1 teaspoon ground cumin
Salt and Pepper to taste
In a large bowl, stir together 1 (10-ounce) package frozen, chopped spinach,
thawed and squeezed dry, with 1/4 cup finely chopped onion, 2 eggs, 2
tablespoons flour, 1 teaspoon ground cumin and salt and pepper to taste.
Heat 2 tablespoons olive oil in large skillet and spoon heaping tablespoons
of spinach batter into hot oil, do not overcrowd pan. Cook the fritters on
each side until brown and crispy, about 4-5 minutes total.
Makes 4 side dishes.
