Popeye’s Soufflé
2 (10 oz) pkg chopped spinach, cooked and drained
1 egg, beaten
1-1/2 cups sour cream
1/2 pkg onion soup mix
1 cup grated cheddar cheese
1/4 cup breadcrumbs
Add egg to spinach. Mix in sour cream and soup mix. Pour into casserole. Cover with breadcrumbs and cheddar cheese. Bake for 40 minutes at 350 F.
