Poppy's Norwegian Waffles

Hi! I’m posting a recipe to share! This was a favorite of mine growing up. My grandfather (Poppy) used to make this and was 1/2 Norwegian. I’m not sure if this is an authentic recipe from Norway, but it’ll still rock your socks!

2 cups flour
3 eggs
2 teaspoons baking powder
2 cups milk
1 cup sugar
1 stick butter, melted (though you may certainly use 2 sticks. Poppy did but I just can’t do it)

Mix together and pour into preheated waffle iron according to manufacturer’s directions.

I like to leave mine in for 8-10 minutes. It has a bit of crunch to it while still being moist inside. But cook for as long as you’d like. Some like it barely brown and others can’t eat it until it’s golden!
