Pork Chops A la Sweet N Sour

1 Tb Toasted Sesame oil
4 ea Pork loin chops - boneless
Salt and Freshly Ground Black Pepper
1 C Apricot Preserves
2 Tb Soy sauce, low -sodium
1 Tsp Ginger
1/4 C Scallions or green onions, chopped

In a large skillet over medium high heat, heat the oil. Season the chops on both sides with salt and pepper. Add to skillet and cook until golden brown about 2 minutes per side. Add the preserves, soy sauce, and ginger to the skillet and stir together, bring to a simmer. Turn heat to low and partially cover pan an dsimmer for about 5 to 7 until pork is cooked through. Remove from heat and stir in scallions. Serve.
