Pork Chops Braised with Cider & Apples
4 (3/4-inch-thick) center-cut pork chops
1 Tbsp oil
Salt and pepper
2 Tbsp butter
1 large onion, thinly sliced
1 tart apple, cored and thinly sliced
1/2 cup apple cider
1-1/2 Tbsp apple cider vinegar
1 bay leaf
Season pork with salt and pepper. Heat oil in heavy large skillet
over medium-high heat. Add pork and cook until brown and cooked
through, about 5 minutes per side. Transfer pork to platter and tent
with foil to keep warm.
Add butter to skillet and melt over medium heat. Add onion and apple
and saute 5 minutes. Mix in cider, vinegar and bay leaf; cover and
cook until tender, 10 minutes.
Discard bay leaf. Add any juices from pork platter; increase heat and
cook until sauce thickens slightly, about 3 minutes.
Spoon sauce over pork and serve
