Enchiladas Pork H.J.’s
2- 3 lbs. lean pork roast
2 bay leaves
1 can black olives….chopped
1 ½ large yellow onions …finely diced
2 T. cumin
1 - 28 oz. can of Green Chili Sauce or make your own
¾ cup of Grated cheeses or more …see below
12 corn tortillas ….I use the white
8 T. oil
Garnish with
2 -Roma tomato diced
3 Green onions and stems diced
1 ½ to 2 lbs. of lean pork roast …cooked in pressure cooker with 2 bay leaves, ½ of the chopped black olives, 1 large onion, cumin
Drain . . . skim all the fat off the broth when cooked. .remove meat and bay leaves. Shred meat in a bowl with a fork.
In a sauce pan pour 1 can - 28 oz. Green Chili Enchilada sauce, …using Hatches or Stokes Brand with some of your broth from the pressure cooker . . mix together and simmer if need to thicken use a little flour or cornstarch… Stir often while this is thickening.
Start your Enchilada’s by heating the oil in a skillet… dip each tortilla in heated oil for a few seconds to … soften…. Dip both sides of tortilla immediately into the green chili sauce …remove with tongs.
Lay the tortilla down into the glass deep baking dish… place about 1 T. or more of the meat mixture into tortilla and adding a little of the remaining chopped black olives, some of the onion chopped and little of the cheese… . Now, roll to desired size… placing inside a sprayed 13x9x2 baking glass dish sprayed with Pam… tortilla seam side down… continue process with the rest of the tortillas till the dish is filled… You can layer crosswise if necessary
Top with generous portions of Green Chili Sauce and grated Cheddar or combo of cheeses and sprinkle a more cumin powder over the top before the cheeses.
Cover with foil and Bake
12-24 medium corn tortillas
Bake in oven at 350 degrees for 30 to 35 minutes. Let set while dicing the tomatoes and green onions. Remove cover and put tomatoes and green chopped onions and stems on on top. Serve hot and with extra sauce on the side.
For Variety, top with sour cream and green onion tops or black olives
You can use 1/2 chicken and 1/2 pork also.
Any left over meat can be used for Tacos. Enjoy
