Portuguese Corn Bread

This recipe came from my dearest friend of 25 years who just lost her battle with cancer. She gave me this recipe at least 10 years ago and everytime I make it I’m reminded of the good times we shared. I make it every year to share with family and friends as we share a meal and watch the super bowl game.

3/4 cup yellow corn meal
2 eggs
1-1/2 tsp. baking powder
1/2 cup buttermilk
2 cups grated cheddar cheese
1/3 cup veg. oil
1/2 cup chopped yellow onions
1/2 cup chopped green bell peppers
1/2 cup cream corn
1 tsp. salt
1 small can Ortego diced green chilies

Mix ingredients together except cheese. Grease well with cooking spray a casserole baking dish. Pour half the batter in baking dish. Add cheese than pour remaining batter over it. Bake at 350 for about 30 to 40 min. Corn bread should be light to medium golden brown and when knife is inserted in center it should come out clean. If not cook it a little bit longer and recheck it again. If recipe is doubled cooking time is varied, just keep your eye on it.
