PORTUGUESE SWEET BREAD
1 C. butter
1 1/4 C. all-purpose flour
3/4 C. granulated sugar
1/4 tsp. cinnamon
1/4 tsp. nutmeg
Combine all ingredients and set aside.
6 to 6 1/2 C. unbleached flour
1 C. granulated sugar
1 tsp. salt
1/4 tsp. ground cardamom
2 pkg. active dry yeast
1 C. milk
1/4 C. water
1/2 C. butter
3 eggs, beaten
1/2 tsp. vanilla extract
Premeasure flour and set aside. Mix 1 cup flour, sugar, salt,
cardamom and yeast. Heat milk, water and butter until warm (
not hot) to touch. Butter need not be melted. Add to flour mixture
with eggs and vanilla extract. Continue to mix, adding flour one
cup at a time until kneadable dough is formed. Knead 10 minutes.
Place in greased bowl, flip to grease both sides; let rise 1 hour.
Punch down. Roll out and braid or form round loaves. Sprinkle
with streusel mixture or brush with egg. Let rise for 1 1/2 hours.
Bake at 350ÂºF for 35 to 40 minutes.
