Potato Balls

3 c leftover mashed potatoes
2 oz. cream cheese
2 1/2 tsp onion soup mix
2 eggs, beaten
2 1/2 c crushed corn flakes

Mix potatoes, cream cheese and onion soup mix together. Use cookie scoop to form balls and roll in egg and then in crushed corn flakes. Bake at 425 for 15-20 minutes. Makes 2 1/2 - 3 dozen. I made these the other night and they are really yummy. The kids dipped them in ranch dressing.
