Potato Pancake Wedges

4 med leftover boiled potatoes, shredded (about 1 1/3 lbs uncooked)
1/2 cup seasoned bread crumbs
1/2 cup minced onion
2 eggs and 1 egg white, beaten
1/4 cup chopped parsley
1 teaspoon salt
1/4 teaspoon pepper
2 teaspoons olive oil
3/4 cup applesauce
3/4 cup sour cream(or unflavored yogurt)

Preheat oven to 450 degrees. In large bowl, mix all ingredients except oil, applesauce, and sour cream substitute. Coat a 12 inch pizza pan with vegetable cooking spray; lightly press potato mixture into pan. Brush lightly with oil. Bake about 20 minutes until top is crisp and golden brown. Cut into wedges; serve with applesauce and sour cream substitute.
