Potatoes Riojanas ~ Serves 2

3 tablespoons olive oil
1/2 small onion – finely sliced
1 clove garlic – finely sliced
1 pound white, red or Yukon Gold potatoes – halved
1 small rosemary sprig
1 cup dry red wine
kosher salt
freshly ground white pepper
1 1/2 teaspoons unsalted butter
1/4 cup water – if needed

In a deep saucepan, heat olive oil over medium-high heat. Add onion and garlic. Sauté for 2 to 3 minutes. Add the potatoes, rosemary, red wine, salt and pepper to taste. Bring to a boil. Reduce the heat to medium-low and simmer, stirring occasionally for about 35 minutes. If the liquid evaporates before 35 minutes, add water. Once the potatoes are cooked and tender, stir in butter. Set potatoes aside for 5 to 6 minutes before serving.
