Potluck Sweet And Sour Meatloaf


1 can (8 oz.) tomato sauce
1/4 c. light brown sugar, firmly packed
1/4 c. vinegar
1 t. prepared mustard
1 egg
1 small onion, minced
2 slices bread, in crumbs
2 lbs. ground beef
1 t. salt
1/4 t. pepper

Heat oven to 400* F.

Combine tomato sauce, brown sugar, vinegar and mustard, stirring until sugar is dissolved. Beat egg, add onion, bread crumbs, meat, salt, pepper and 1/2 c. tomato mixture. Mix well.

Line shallow pan with foil. Shape meatloaf on foil. Makes holes in top of meatloaf and pour remainder of tomato mixture over top.

Bake until done.

Good hot or cold; makes good sandwiches.
