Powerhouse Meatloaf

1 potato 1 small onion 1 tomato 1 stalk celery 10 baby carrots or 2 regular ones,peeled 1 lb. ground beef 1 c. bread crumbs 2 eggs 1/2 t. salt and pepper 1/2 c. ketchup 2 t. mustard
Preheat oven to 350. Peel potato. Chop all vegetables and put in food processor. Process until chopped fine. In large bowl combine vegetables with meat, bread crumbs , eggs salt and pepper. Fill muffin tin cups with mixture. Mix ketchup and mustard. Spread over top of meat. Bake 45 minutes or until meat is done.
