Prawn Cocktail


4 large lettuce leaves, washed, shaken dry and very finely shredded
6 fl. oz. mayonnaise
4 tablespoons double cream
2 teaspoons Worcestershire sauce
2 teaspoons lemon juice
2 teaspoons tomato ketchup
¼ teaspoon cayenne pepper
½ teaspoon salt
½ teaspoon black pepper
14 oz. prawns, shelled
1 teaspoon paprika
4 thin cucumber slices
1 lemon quartered


  1. Stand 4 individual serving glasses on 4 small plates. Divide the shredded lettuce equally among the glasses and set aside.
  2. In a medium sized mixing bowl, combine the mayonnaise, cream, Worcestershire sauce, lemon juice tomato ketchup, cayenne pepper, salt and pepper, beating with a wooden spoon until the mixture is smooth and evenly coloured. Stir in the prawns.
  3. Spoon the mixture equally over the lettuce in the glasses and sprinkle over the paprika.
  4. Garnish with the cucumber and lemon quarters and server immediately.

NB. You could always use shrimps instead of prawns if you prefer.
