Prime Rib (two boneless roasts) Timetable

I have looked for 3-4 years for a solid roasting chart. I find times of 5 minutes per pound up to 35 minutes per pound.

I have a boneless 14# roast and will cut into two 7# pieces. I want to cook one medium-rare and the other well.

What should it do?

I have a recipe for a prime-rib roast, any weight, bone-in or boneless. No fancy spices to spoil the real taste, just inject garlic cloves in various spots in the roast. If no injector just make slits in the meat and insert them that way. Follow the instructions exactly and you will have a perfect medium roast. Sometimes simple is best.

Pre-heat oven to 400 degrees.
Insert/inject garlic cloves into roast.
Bake roast in shallow pan - NO COVER-NO WATER- for 1 hour.

Turn oven OFF for 2 hrs 15 min.

Turn oven back on to 300 degrees and roast for 1 hour 15 min.

Remove from oven. Let stand 10 min.
Slice as needed.
Do not slice & leave on platter. It will continue to cook.

NOTE: Leave oven door CLOSED during entire cooking time, and stand time in oven.
Do not cook anything else in oven with roast.
Total cooking time will be 4 hrs 30 min, plus 10 min stand time.

If you like your prime-rib with Blue Cheese:
Slice a portion, put on a oven proof dish, put blue cheese, or gorgonzola
crumbles on top, and put in the broiler a few seconds till the cheese melts.

You won’t be sorry.
This works for any type of beef roast-not just prime-rib.
