Problems with jelly

this is my first post thankyou for the opportunity.
Yesterday I attempted to make a red pepper jelly which I thought didnt set
when I opened the jar to redo I found about 1/2 inch of liquid syrup on the
top and the rest of the jar had set up . I have never seen this before.
Is this going to be ok to eat? It was water processed after bottling.
Any feedback would be appreciated.

As long as the jar was sealed, it should be okay to eat. That by the way was the first time I have ever heard of jelly doing that, I will have to do some reading about that.

Thats a lot of good info .the recipe i used called for liquid pectin
and said it would set within 24 hours. so much for recipes. I will try yours next batch thankyou
