Prosciutto and Potato Pizza
Makes one 14-inch pizza
2 tablespoons extra-virgin olive oil
1 clove garlic, minced
1 large redskin potato, peeled and sliced very thinly
1/2 cup chopped scallion, white part only
1/2 teaspoon dried rosemary, crumbled, or 2 teaspoons fresh, chopped
1/2 teaspoon dried thyme, crumbled, or 2 teaspoons fresh, chopped
2 teaspoons hot red pepper flakes
1/4pound thinly-sliced prosciutto
1/4 cup grated Parmesan cheese
Brush the crust with the olive oil. Sprinkle the garlic evenly over the oil. Arrange the potatoes over the crust up to the border, overlapping them if necessary. Sprinkle the scallions over the potatoes. Sprinkle on the rosemary, thyme, and red pepper flakes. Shred the prosciutto and arrange it over the top. Sprinkle the Parmesan evenly over the pizza. Bake.
