Quick and Easy Crisp Chicken Pieces with Stuffing

Ingredients Preparation

5 or 6 bone-in chicken pieces
1 [5 1/2-ounce 155-g] envelope original Shake'n Bake® coating mix
1 [8-ounce / 227-g] box stove-top stuffing mix with long grain and wild rice
1/2 sweet red pepper, membranes removed and seeded, finely diced



Preheat oven to 400°F [200°C].
Coat chicken pieces with coating mix following packaging instructions.
Arrange chicken pieces into a shallow baking pan.
Bake into preheated oven for 30 minutes.
Meanwhile, prepare stuffing mix following the instructions on the box and adding sweet red pepper dices along with breadcrumbs.
Arrange chicken pieces shaping a nest.
Spoon stuffing in the middle.
Bake chicken and stuffing for 10 to 15 minutes longer, until chicken is tender.

Shake & Bake, funny. I haven’t had that since I was a kid. Didn’t know they still made it.

Yeah - they do - I don’t know how old you are - but I remember back in the mid-60’s when they came out with shake and bake for chicken and for fish - that was it. Now they have so many of them - chicken glaze, pork, honey pork, Italian, southern fried, crispy chicken, herb and parmesan, ranch - seems like the list is endless.
