Quick Chicken & Potatoe Fiesta
1 box of(4.9oz)Betty Crocker scalloped potatoes
2 1/2 Cups of boiling water
3/4 cup of milk
1/3 cup of shredded Monterey Jack cheese
1/3 cup of shredded Cheddar cheese
1/3 cup of chunky salsa
2 5 oz. cans chunky breast of Chicken, , drained
Heat oven to 400 Degrees
Stir together potatoes,sauce mix and boiling water in ungreased 2qt. casserole dish. Stir in remaining ingredients Bake Uncovered for 50-55 minutes or until potatoes are tender. Let stand for a few minutes.
