Quick Chocolate Snack Cake (a.k.a. Wacky Cake)
When you need a little chocolate fix in a hurry!
1-1/2 cups all-purpose flour
3/4 cup granulated sugar
1/4 cup unsweetened cocoa powder
3/4 teaspoon baking soda
1/4 teaspoon table salt
1 Tablespoon white vinegar
1-1/2 teaspoons vanilla extract
5 Tablespoons melted peanut butter (or vegetable oil)
1 cup water
Preheat oven to 350 degrees.
In a non-stick 9" round (or 8" square) baking pan, add first 5 dry ingredients, stirring with a fork to thoroughly combine. Then make 3 wells. Add the next 3 wet ingredients, 1 to each well. Pour 1 cup water over top of mixture and stir with fork to thoroughly combine. Bake for 25-30 minutes until cake is set and top springs back when you press lightly. Cool in pan on wire rack (or just start eating it out of the pan). DG
