Quick & Easy Budget Stroganoff

1 lb ground chuck (or ground beef)
1 lg onion, diced
1 pint sour cream (or unflavored yogurt)
8 oz. wide noodles
1 can cream of mushroom soup

Brown ground chuck and onion. Drain well and add soup. Cook noodles in another pan; drain/rinse and add to meat mixture. Cook for 10 minutes. Just before serving, stir in sour cream (or yogurt) and mix well.

Diced leftover chicken, or turkey, or ham, or meatloaf, or sausage, or roast beef, or steak, etc.

Cooked egg noodles

can of peas, or corn, or carrots, or mixed veggies, or beans, etc.

small can of sliced mushrooms (optional)

diced potatoes (white or sweet) optional

cream of (your choice) soup

Combine; pour into casserole; top with dry bread crumbs; dot with butter; bake at 350* F. for 30 minutes or until heated through and crumbs are toasted.

Goes well with a nice green salad and hot rolls fresh from the oven.
