Quickie Cobbler

4 tablespoons butter (1/2 stick)
1 1/4 cups sugar divided
1/2 cup self rising flour
1/2 cup milk
2 cups canned or frozen fruit with juice

Melt the butter in a casserole dish.
Mix flour, milk, and 1/2 cup sugar and pour over the butter.
Add whatever fruit you like, peaches, cherries, blueberries etc.
If the fruit is unsweetened add 3/4 cup sugar.
Do not stir.
Bake at 400 about 20-25 min. until golden brown.

Even quicker - replace the flour, sugar and milk with boxed yellow cake mix. Use canned fruit with the juice or syrup. Spread the cake mix over the fruit in a baking dish and dot with butter and bake.

I like the idea of using canned or frozen fruit instead for fresh in cobbler recipes. I guess many original cobbler recipes came from long ago with people grew their own fruit and had to use it. Now fresh fruit can be expensive and is better enjoyed fresh, leaving the canned and frozen for recipes.

Agreed, I like to use fresh when making ice cream. I have a jam up recipe for my favorite Peach.
I will post it when we get closer to homemade ice cream time in the summer. I have my own peach
trees and the one I like best is the Alberta which is a very sweet light colored peach, and some people
call them white peaches. Can’t wait! I wished all of you could join me for a bowl.
