2 cups plain flour
1 1/2 cups sugar
1 cup malai (fresh cream)
2 tsps baking powder
1/2 tsp salt
1 tsp vanilla essence
food colors (as per your choice)
Preheat the oven to 180 C.
In a mixing bowl, beat the eggs and sugar with a electric beater till nice and fluffy.
Sieve the flour, baking powder and the salt.
Add it to the eggs and sugar mixture.
In another bowl beat the cream lightly till it is smooth. (If the malai is too grainy and hard add a little milk to it and strain it in a tea strainer.)
Add the beaten malai and vanilla essence and fold it in with a light hand.
Once this basic white batter is prepared, take several bowls and divide the batter equally between them depending on the number of colors you choose to use.(You can use cocoa powder to get the brown color).
In a prepared baking dish spoon in the batter in any way you like till all of it is used up. (you can either spoon the colors one on top of each other, layer them alternately, put them separately…as you like it).
Bake it in a preheated oven at 175 C for 35 - 40 minutes or till the cake is firm to touch.
Cool before serving.
