Ramen Noodle Slaw

1 bag of broccoli slaw mix (or use cole slaw mix)
3 to 4 green onions (chopped)
2 pkgs. ramen noddles (any flavor)
1/2 cup of sliced almonds or sunflower seeds
1/2 cup sugar
1/4 cup of oil
1/3 cup vinegar

Mix oil,vinegar,sugar & noodle flavor packets; set aside.

Mix broccoli,onions & nuts.Crush noodles add to slaw mix, then add dressing. Toss & serve. Refrigerate.

I love broccoli slaw. This is a really good recipe with oil and vinegar dressing. I’ve also tried it with a mock peanut sauce dressing.

This “peanut” dressing came from a restaurant Mandarin Chicken Salad recipe.
The dressing is unusual in that it tastes similar to a peanut sauce, but it contains no peanut products.
Maybe this would be good for someone that can’t or doesn’t want to eat peanuts.

Mandarin Dressing:
1 cup mayonnaise
1 1/2 Tablespoons granulated sugar
1 1/2 Tablespoons balsamic vinegar
3 Tablespoons hoisin sauce
2 1/2 teaspoons sesame oil
1 teaspoon soy sauce
Combine all dressing ingredients and mix well. Makes 1 1/2 cups.
