Rancher’s Beef Turnovers

1 pound lean ground beef
1/2 cup chopped onion
1/4 cup chopped green pepper
2-1/4 cups biscuit mix
1 teaspoon salt
1/4 teaspoon pepper
1/3 cup ketchup
3 tablespoons butter or margarine
2/3 cup milk
1 can (10-1/2 ounces) beef-mushroom gravy, optional

Cook beef, onion and green pepper in skillet until beef is browned. Pour off excess fat. Add 1/4 cup biscuit mix, salt, pepper and ketchup. Cook, stirring frequently, several minutes.

Cut butter into remaining 2 cups biscuit mix until mixture becomes crumbly. Blend in milk. Turn out on board dusted with biscuit mix. Knead eight to 10 times. Divide dough in half. Roll each half into a 10-inch square. Cut each into four squares. Top each square with 1/3 cup of filling. Fold over corner to corner to make triangles. Seal edges and cut steam vents in top.

Bake on greased baking sheet in hot oven (400 degrees) until browned, about 15 minutes. Serve with hot beef-mushroom gravy over top. Makes eight.
