Ravigote Sauce
1/2 cup white wine
1/4 cup vinegar
5 tbsp butter
4 tbsp flour
2 cups seasoned veal or chicken broth
1 shallot, minced
1 tsp minced chervil
1 tsp minced tarragon
1 tsp chopped chives
salt and pepper
Combine wine and vinegar and simmer down to 1/2.
Melt 3 tbsp butter and blend in flour. Add broth and cook until thickened, stirring constantly. Add to wine and simmer 5 minutes. Add herbs and remaining ingredients.
Serve with poultry or eggs. Makes 2-1/2 cups.
