For 2- I have my husband bake 2 Russet Potatoes. While keeping the potatoes warm, I boil in the bag a box of frozen low-fat brocolli with cheese sauce. I split the potatoes open, put a scoop of low-fat cottage cheese in each potato, over that I pour 1/2 the bag of brocolli/cheese sauce in each spud and then over that top each one with salsa. Delish and soo good for you too! The nutrition in a baked potato way out-weighs the carb dilemna-so enjoy a good spud every now and then!
