Recipes From My Mom's Scribbler

hi everyone,

it’s been ages since i’ve posted. have been really busy with school.
the following recipes are from a ‘scribbler’ (note book) that mom would write her recipes into. i grew up with these recipes.
this is the first time that i’ve been able to get my hands on these recipes and i’m honoured to share them with you. i’ve asked my mom for some of these recipes for years. she finally relented and let me borrow the book. as a kid, i remember alot of these recipes with fondness. typing out these recipes brought back so many memories. it’s been years & years since i’ve even tasted many of these.
as a kid growing up i’m sure that i’ve eaten all of these recipes at one time or another.
you will notice that many of the recipes do not have full directions. if you’re an experienced cook i’m sure that you can figre them out. please don’t ask for the complete directions. i don’t have them and have no way of getting them. all of these recipes are over 40 years old. i’ve written most of the recipe as they are in the scribbler. i guess mom knew what she was doing with these recipes. you know how it is getting recipes that are handed down.

Applesauce Cake (karen’s ’66)

Make Unsweetened Applesauce. Grease & Flour 13 X 9-inch Pan.

Sift Together:

2¾ Cups Flour
2 Cups Sugar
¼ Tsp Baking Powder
1½ Tsp Baking Soda
1½ Tsp Salt
¾ Cup Cinnamon
½ Tsp Cloves
½ Tsp Allspice

Add:

½ Cup Shortening
½ Cup Water
1½ Cups Applesauce
2 Eggs

Beat 2 Minutes And Add ½ Cups Chopped Walnuts & 1 Cup Raisins.

Bake In Preheated 350°f For 45 – 50 Minutes.

“doughnuts” (grandma Chambers)

3½ Cups Flour
4 Tsp Baking Powder
1 Tsp Baking Soda
½ Tsp Salt
¼ Tsp Nutmeg

2 Tbsp Shortening
1 Cup Sugar
2 Eggs Beaten
½ Tsp Vanilla
1 Cup Milk

Mix Dry Ingredients. Cream Shortening & Add Sugar, Egg & Vanilla. Add Dry Ingredients Alternately With Milk. Roll Out ¼ - 3/8 Inch.

“spud”nuts (mary Dobbs ’72)

1 Pkg Yeast
2 Cups Milk (scalded & Cooled)
¾ Tsp Salt
½ Cup Margarine
3 Eggs Well Beaten
½ Cup Sugar
1 Cup Mashed Potatoes
1 Tsp Nutmeg
Flour

Add Risen Yeast To Cooled Milk Then Add Sugar, Eggs, Margarine, Salt, Mashed Potatoes & Nutmeg. Stir Well. Let Rise Until Double In Bulk, Then Knead & Roll To ½ Inch Thick. Cut With Doughnut Cutter & Let Rise Again.

Cook In Deep Fat Until Golden Brown. While Still Hot, Dip In A Glaze Made From 1 Lb Icing Sugar, 2 Tbsp Butter & Enough Water To Make A Syrup.

Ann’s Cookies

1 Cup Brown Sugar
1 Egg
1 ¾ Cups Flour
1 Tsp Salt
1 Tsp Cream Of Tartar
½ Tsp Soda
1 Cup Shortening
1 Tsp Vanilla

Mix All Ingredients. Put In Fridge For 1 Hour. Roll Into Balls & Flatten With Fork.

AUNT AMY’S SALAD

1 CUP SOUR CREAM (COMMERCIAL)
1 CUP PINEAPPLE – DRAINED
1 CUP MARSHMALLOWS
1 CUP COCONUT
1 CUP MANDARINS

JUST MIx WITH SPOON & SET IN FRIDGE.

Butter Tarts

1/3 Cup Butter
1 Cup Brown Sugar
2 Tbsp Milk Or Cream
½ Cup Currants
1 Egg Beaten
1 Tsp Vanilla

Mix Together & Place In Shells. Bake At 350°f.

Barbeque Sauce

1 Cup Chopped Onion
1 Cup Ketchup
1 Cup Water
2 Tsp Salt
2 Tbsp Worcestershire Sauce

1/4 Cup Water
¼ Cup Brown Sugar
2 Tsp Dry Mustard
1 Tsp Paprika

Banana Cake

½ Cup Butter
1 Cup White Sugar
2 Eggs
4 Tbsp Sour Milk
½ Tsp Baking Soda

1¾ Cup Flour
2 Tsp Baking Powder
½ Tsp Salt
1 Tsp Vanilla
1 Cup Mashed Banana

Cream Butter, Add Sugar.

Add Well The Eggs.

Add Bananas & Vanilla. Beat Well

Disovle Soda In Milk.

Sift Flour, Baking Powder & Salt & Add Alternately With Milk To Banana Mixture.

Bake In Loaf Or Large Pan For 50 Minutes.

Baking Powder Biscuits (leta’s)

Mix Together:

2 Cups Flour
4 Tsp Baking Powder
Salt
¼ Tsp Cream Of Tartar
½ Cup Shortening
2/3 Cup Milk

Butter Tarts (betty’s 1967)

2 Eggs (beaten)
¾ Cup Brown Sugar
¾ Cup Corn Syrup
Salt
½ Cup Chopped Nuts
1 Tsp Vanilla
1 Tbsp Butter

Carrot Jell-o

2 Orange Jell-o’s
1 – 20 Oz Tin Crushed Pineapple
½ Cup Grated Carrot (onion & Celery)
2½ Cups Water

Butterscotch Pie (grandma Chamber’s)

2 Cups Brown Sugar
3 Cups Milk
2 Egg Yolks (beaten)
7 Tbsp Butter

Mix Brown Sugar & Flour. Put Milk On To Heat. Mix In With Brown Sugar Mixture. Stir Constantly. Beat Yolks & Mix On. Add Vanilla & Butter When Thickened.

Butter Tarts (mary Gethons)

2 Eggs
¾ Cup Brown Sugar
Pinch Of Salt & Vinegar
3 Tbsp Corn Syrup
1 Tbsp Butter

Cherry Cheese Pie (marj’s Mom)

1 Tin Eagle Brand Milk
1 – 8 Oz Pkg Cream Cheese
1/3 Cup Lemon Juice
1 Tsp Vanilla

Mix Ingredients, Put In Graham Crackers Pie Crust. Chill 2 Hours. Top With 1 Tin Cherry Pie Filling.

Cherry Squares (lois Shannon ’66)

Bottom Layer:

24 Graham Crackers, Rolled Fine
2 Tbsp Melted Butter
4 Tbsp Sugar

2nd Layer:

½ Pint Whipped Cream (dream Whip)
1 Cup Marshmallows (cut Fine)

3rd Layer: 1 Can Cherry Pie Filling

Spread ½ Cracker Mixture In 8 X 10-inch Pan. Add ½ Of The Cream Cheese Mixture, Then Add Pie Filling. Add Rest Of Cream, Then The Crumbs. Pat Down. Refrigerate Overnight.

Coffee Cake (grandma Fekete)

½ Lb Margarine,
1 Cup White Sugar,

Cream Together, Then Add 2 Eggs. Beat.

Add 1 Cup Sour Cream (soured Carnation), 1 Tsp Vanilla. Mix Well.

Add The Following Sifted Together:  2 Cups Flour
1 Tsp Baking Powder
1 Tsp Baking Soda
1 Tsp Baking Powder
½ Tsp Salt

Put ½ The Batter In Greased 9 X 13-inch Pan. 

Sprinkle With ½ The Following Mixture:  1/3 Cup Brown Sugar
1/3 Cup White Sugar
2 Tsp Cinnamon
½ Cup Chopped Walnuts

Spread Rest Of The Batter On Top. Sprinkle Rest Of Sugar Mixture On Top. Bake At 350°f For 35 Minutes.

Chocolate Peanut Butter Clusters (mary Gethons)

1 – 6 Oz Pkg Chocolate Chips
1 – 6 Oz Pkg Butterscotch Chips
1 Cup Dry Chow Mein Noodles (broken Into 1 Inch Pieces)
1 Cup Peanuts

In Top Of Double Boiler, Melt Chips. Add Noodles & Nuts, Mix Well. Drop On Wax Paper & Allow To Set.

Chinese Pork Chops

6 Loin Chops ½ Inch Thick
2 Tbsp Soya Sauce
½ Tsp Each, Salt & Msg
½ Tsp Garlic Powder
2 Cups Apple Juice
½ Cup Slice Mushrooms
½ Green Pepper (sliced In Strips)
4 Or 5 Onions
1 Cup Celery (sliced)
½ Cup Frozen Peas

Brush Chops With Mixture Of Next 5 Ingredients. Refrigerate For 1 Hour.

Sauté In Oil. Add Apple Juice & Cover. Simmer 50 Minutes. Add Veggies & Cover. Simmer 10 Minutes. Remove Chops & Thicken With Cornstarch.

Chinese Chicken Wings

Equal Amounts Of Marmalade, Ketchup, Soya Sauce & Twice As Much Water & 2 Cloves Garlic.
