Red Potato Salad

Dressing can also be used as a vegetable dip, just omit 1 Tbsp of dijon mustard!


2 lbs small, red potatoes, cooked and quartered
1 cup celery, chopped
1/4 cup green pepper, chopped
1/4 cup red pepper, chopped
1/4 cup green onion, chopped
1/4 cup red onion, chopped

1 cup mayonaise
2 Tbsp Dijon Mustard
2 Tbsp dill weed
2 Tbsp parsley
2 Tbsp vinegar
1/2 tsp salt
1/4 tsp black pepper

Mix dressing first and let sit for a couple of hours to combine the flavours.

Just before serving, pour dressing over salad and mix until just coated.
Serve and enjoy!

As luck would have it(must be the Luck’o the Irish) I have all the ingredients and I will make this tomorrow. It sounds delicious.

I made this early today so the flavors would blend by tonight. This is a very delicious recipe that won’t last long in this house. I think next time I will double the amount. Excellent! Thank you, B-man
