RED SKINNED POTATOES WITH BACON
8 small Red Bliss potato, about 1 lb.
Salt and freshly ground pepper
8 thick slice of bacon
1 tbsp. olive oil
1 tbsp. fresh thyme or Â½ tsp. dried
2 tbsp. water
1 tbsp. chives, chopped
Preheat oven to 400* F. Place the potatoes in a small saucepan with water to cover and salt to taste. Bring to a boil and simmer for 18 minutes. Add the bacon slices and simmer for 5 minutes more. Drain the contents of the pan and allow to cool. Wrap each potato in a slice of bacon and place them in a flat oven proof dish. Sprinkle with the olive oil, thyme and fresh ground pepper. Add 2 tbsp. of water and bake for 20 minutes, or until the bacon is lightly browned. Sprinkle with chives and serve.
