WOOLWORTH?S CHEESECAKE

Do you remember Woolworth’s from the 50’s and 60’s? It was one of the first five and dime stores that sold just about everything. Many always stopped at their lunch counter to enjoy their cheesecake.

1 pkg. (3 oz.) lemon Jell-O
1 c. boiling water
8 oz. cream cheese
1 c. sugar
5 T. lemon juice
1 can Carnation milk, well chilled
Graham crackers, crushed

Dissolve Jell-O in boiling water. Cool until slightly thickened. Beat cream cheese, sugar and lemon juice with mixer until smooth. Add thickened Jell-O and beat well.
In a separate bowl, beat milk until fluffy. Add cream cheese/Jell-O mixture and beat well with mixer. Line bottom of 13 X 9-inch pan with crushed graham crackers. Spread filling over and top with more crushed graham crackers. Chill.

This is one of my family’s favorite cheesecake recipes. Everytime I make it, it brings back so many memories of the Woolworth’s lunch counter.
