Rhubarb Slush

This is a great summer refresher. My friends and family really like this one.

8 cups rhubarb, chopped
3 cups sugar
1/2 cup lemon juice
2 qt. water
1 pkg. strawberry Jello
2 cups Vodka (optional)

In a large pot cook the rhubarb with the sugar, lemon juice, and water until tender.

Strain, retaining the juice.

Add the package of jello, and the vodka. Pour into an ice cream pail, and freeze.

To serve, scoop some into a glass and add a splash of 7up or Ginger Ale.
